Vegetarian moussaka

The traditional vegetarian moussaka includes the potato noodle as a main ingredient alongside eggplant! This Mediterranean cuisine’s ‘lasagne’ is full of wonderfully soft, well-spiced flavor.

Ingredients:

approx. 6 servings

  • 0,800 KG Mestari potato noodles
  • 0,300 KG Palirria crushed eggplant
  • 0,300 KG Palirria giant beans in tomato sauce
  • 0,100 KG Royal roasted pepper strips
  • 0,100 KG Dodoni feta spread or crumbled Filos feta
  • 0,200 KG Dodoni Greek plain yogurt or Filos yogurt
  • 0,050 KG Filos lemon-flavored extra virgin olive oil
  • 2,000 dl lactose-free cream
  • 0,050 KG leek
  • 0,050 KG spring onion

Spices:
lime pepper
salt
white pepper
oregano
thyme
Persillade seasoning mix
Filos extra virgin olive oil lemon

Preparation:

Grease the baking dish with lemon oil, season the potato noodles with salt, thyme, white pepper and oregano. Mix the mashed eggplant and crumbled feta together. Add some of the seasoned potato noodles to the bottom of the dish, then add bell pepper strips, spring onion, leek, grated carrot, tomato bean, the eggplant-feta mixture and potato noodles in layers.
Mix the yogurt and cream, season with lime pepper and persillade seasoning mix and mix well.
Pour into the dish and bake in the oven at 180 degrees for 50 minutes. Note! Baking instructions are oven-specific.
