Vegetarian borscht

This borscht is real vegetarian food, and full of flavor!

Ingredients:

  • 0,300 KG Mestari potato noodle
  • 0,300 KG chopped red cabbage
  • 0,100 KG chopped white cabbage
  • 0,400 KG Hengstenberg red cabbage salad
  • 0,400 KG Royal roasted pepper strips
  • 0,050 KG carrot strips
  • 0,050 KG leek strips
  • 0,020 KG Filos dark fig balsamic
  • 0,300 KG seasoned beetroot strips + broth 2 dl

Spices:
Thyme
Salt
Black pepper
White pepper
Fig balsamic
Vegetable stock
Parsley
Filos extra-virgin olive oil lemon

Preparation:

Sauté all the raw vegetables in a pan or roast them in the oven with oil and balsamic. Transfer to a pot and add about 0.7 dl of water and the seasonings. Cook until the vegetables soften. Add the potato noodles, red cabbage salad, beets and the broth, and let simmer. Check the seasoning and add parsley.
Serve with Filos tzatziki or Filos Greek yogurt.
