Sage potato noodles and lemon chicken

Domestic potato noodles provide a tasty alternative, for example to pasta. Crispy fried lemon chicken and sage-seasoned creamy potato noodles will delight your taste buds.

Ingredients:

Lemon chicken:

  • 15 pcs skin-on boneless chicken drumsticks, thighs or fillets
  • salt, pepper, lemon zest, thyme and oil

Sage potato noodles:

  • 2,000 KG Mestari Potato Noodles
  • 0,100 KG oil
  • 0,200 KG diced onion
  • 0,030 KG minced garlic
  • 0,500 KG chicken stock
  • 1,000 KG cooking cream
  • 0,050 KG cornstarch
  • 0,040 KG lemon juice
  • 0,030 KG salt
  • 0,020 KG fresh sage
  • toasted pine nuts and olive oil

Preparation:

Season the chicken and let it sit for a short while. Fry the chicken in a hot pan until nicely browned and, if necessary, finish cooking in a 200 °C convection oven.

Sauté the onions until soft in a saucepan. Add the chicken stock and cream and simmer for 5 minutes. Mix the cornflour with a splash of cold water and thicken the sauce. Finally season the sauce with lemon juice, salt and sage.

Place the frozen potato noodles in a perforated tray and cook in 100 °C steam for 7-10 minutes. Let drain briefly and pour the potato noodles into a greased GN tray. Pour the hot sauce over and mix. Check the seasoning and finish with toasted pine nuts and olive oil. Serve with crispy pan-fried chicken.
