Potato noodle omelette

This hearty and flavorful potato-noodle omelette is perfect for breakfast or as a snack.

Ingredients:

  • 1,000 KG Mestari potato noodle
  • 0,200 KG Onion cube, frozen
  • 1,500 KG Laitilan Proegg whole egg mass LL
  • 0,400 KG Cooking cheese or processed cheese
  • 0,005 KG Garlic herb seasoning mix
  • 0,002 KG Ground white pepper
  • 0,015 KG Salt
  • 0,010 KG Granulated sugar

Preparation:

Steam the potato noodles and diced onions for 5 minutes.
Line a GN pan with parchment paper and spread the potato noodles and diced onions evenly in the pan.
Combine the whole egg mixture, cooking or processed cheese and the seasonings, mix.
Pour the egg mixture into the pan and gently lift the potato noodles with a spatula so the mixture spreads evenly.

Cooking: 170 °C, humidity 35%, 20-25 min

GN 1/1-65mm, yield 2.8 kg, cooking loss 10%, portion size as a side 150g, servings 18.
