Potato noodle frittata

This nutritious and healthy dish contains plenty of vegetables and protein.
It also works with different fillings if you want to, for example, try making a frittata with fish or even chicken.

Ingredients:

  • 250 g potato noodles
  • 2 red onions
  • 250 g cherry plum tomatoes
  • 100 g broccolini
  • 1 portobello mushroom
  • 2–3 garlic cloves
  • 2 tbsp butter or oil
  • 6 eggs
  • 1.5 dl milk
  • 2–3 tbsp fresh thyme
  • 0.5 tsp salt
  • 200 g grated cheese

Preparation:

  1. Finely chop the onions and garlic, slice the mushroom and cube the potato noodle.
  2. Heat butter or oil in a pan and sauté the onions and garlic. Add the mushroom and potato noodle, fry for a few minutes.
  3. Mix the eggs, milk, thyme and salt. Pour the mixture into the pan and let it set for a moment.
  4. Arrange the tomatoes and broccoli on top, sprinkle grated cheese over and bake at 225C for about 25 minutes.
  5. Cut into wedges and serve at room temperature.
