Italian salad made from potato noodles

Italian salad in which cabbage is replaced with potato noodles. This tasty, hearty and versatile salad is perfect for both everyday meals and festive occasions.

Ingredients:

  • 1,000 KG Mestari potato noodles
  • 0,250 KG cooked carrot cubes or strips
  • 0,250 KG apple cubes or strips
  • 0,200 KG frozen peas
  • 0,250 KG smoked ham, cubed or sliced
  • 0,150 KG gherkins, cubed or sliced

Sauce:

  • 0,200 KG mayonnaise
  • 0,200 KG sour cream
  • 0,200 KG kermaviili (cultured sour milk)
  • 2 tbsp mustard
  • 2 tbsp white wine vinegar
  • a pinch of salt, sugar and black pepper

Preparation:

Let the frozen peas thaw. Pour the frozen potato noodles into a 1/1 GN pan. Steam-cook in a combi oven at 100 °C with steam for 20 minutes under a lid.

Cool quickly.

Gently mix the carrots, peas, gherkins and apples into the potato noodles.

Mix the dressing ingredients and gently fold the smoked ham into the mixture. Check the seasoning and let the salad rest in a cool place for a few hours or until the next day.rnrnMakes 50 portions, about 50 g per portion. Yield 2.5 kg.
