Curry potato noodle soup

Soft yet spicy potato noodle soup brings warmth to your day. If you like, you can replace the cooking cream with coconut cream to add a touch more exotic flavor.

Ingredients:

  • 1,000 KG Mestari potato noodles
  • 0,200 KG onion
  • 0,020 KG garlic
  • oil
  • 0,030-50 KG green curry paste
  • 2,000 L vegetable broth
  • 0,030 L fish sauce
  • 0,500 L Arla cooking cream 15% lactose-free
  • 0,200 KG carrot
  • 0,200 KG cabbage
  • 0,100 KG leek
  • juice of 1 lime

Preparation:

Slice the vegetables into strips. Heat the oil in a pot and add the onions.
Sauté for a couple of minutes. Add the curry paste and sauté for another minute.
Add the vegetable broth and simmer for 10 minutes. Add the cooking cream and fish sauce.
Bring to a boil and add the vegetables and potato noodles.
Cook for 10 minutes and finally season with lime juice.
