Caramelized apples, lemon chantilly and potato drops

A stunning, eye-catching and tasty treat for dessert or indulgent moments! The whole combines sweetness, softness and crispness. Potato noodles also work wonderfully in sweet dishes, as in this delicious combination!

Ingredients:

Apples:

  • 3 apples
  • Cinnamon, butter, sparkling wine
  • Cane sugar for caramelizing

Drip potato:

  • 200 g potato noodles (melted)
  • 20 g cornstarch
  • A pinch of salt
  • Cinnamon, cardamom and powdered sugar for seasoning
  • Chantilly cream
  • Whipped cream, lemon zest and vanilla sugar

Preparation:

  1. Remove the cores from the apples and cut into slices about 1 cm thick.
  2. Vacuum with the spices and cook in steam at 80 °C for 15–20 min. Cool.
  3. Sprinkle raw cane sugar on the surface and caramelize with a blowtorch.
  4. Mix the ingredients for the tippaperuna and deep-fry using a tea strainer in oil at 190 °C.
  5. Serve with whipped cream.
